Agar-Agar

Jelly, gelatine, jello, konnyaku, agar-agar

Available in powder and strip form (dried), agar is made from seaweed and does not have any calories. Suitable for vegetarians and vegans it is used as a setting agent for sweets. Flavourless it takes on the flavours it is mixed with and sets to a firm, pick-upable texture.
 

Konnyaku

As explained by Wiki - Konjac is grown in China, Japan and Korea for its large starchy corm, used to create a flour and jelly of the same name. It is also used as a vegan substitute for gelatin.

Agar-agar : Is those strips of colourless stuffs we find in sundry shops and supermarkets. These are seaweeds. Nowadays, they have made it easy to cook agar-agar because these are processed to powdered form.

Now, in terms of ‘doink-iness’, i.e. how jelly-ish these stuffs above are, the jelly rated as the most jelly-like, with the konnyaku having a firmer but as doink-y. Meanwhile, agar-agar lacks the jelly like texture but tastes better.

If you are new to cooking them, always buy something that has clear instructions. Find those without flavour and if you like add rock sugar instead of normal sugar. It tastes better. Then, you can let your imagination runs wild and flavour or colour those jelly. I did mine with rose syrup and also Ribena.

Just for fun, I use ice-cube makers in heart and cross shapes. If you don’t have the mould, just use any small bowl to make them.

 


Lesson:

Here's a really easy to make, but yummy dessert which you can prepare! Basically, you'll just need to get a can of mixed fruit cocktail and a packet of ready-mix konnyaku jelly powder.

Next, try and find some cute looking moulds.

Drop 3-4 pieces of fruitmix into each mould opening.

Fire up the stove. Boil about 1.2 litres of water in a pot.

When water is boiling, dump in the entire contents of the ready-mix konnyaku jelly powder into the pot.

Make sure to stir well to avoid any lumpy pieces forming in this gelatinous solution. This should take less than 10 minutes. Shut off the fire.

Empty the sachet of malic acid into the pot and continue stirring. The malic acid is what gives the konnyaku a nice sourish tang.

Once the solution cool down a little, pour the konnyaku mix into the earlier mentioned moulds. You can add food colouring if you like to add more variety to the colors.

Place the moulds into the fridge and chill for about 3 hours to cure the jelly.

This is the end result. A simple bite sized dessert. ^_^ _lm/
